Are you looking for an exciting brunch or breakfast recipe with a Mexican flavour twist? Look no further, as we asked one of our most consitent collaborators (@homechefkle) to help us elevate our original chilaquiles recipe, and take it in another direction by incorating some of the newest products on the Casa Bonita Foods line.
Here is the result. A salsa verde (fire roasted jalapeño) chilaquilres for 2 people made with chipotle chips. Full ingredients and instrucionts below the video.
This is the list of ingredients you’ll need:
- 1 cup of sour cream
- ¼ cup Casa Bonita Fire Roasted Jalapeño Salsa
- ¼ cup of butter
- 1 tbsp cumin
- 1 tsp Mexican oregano
- 1 tbsp smoked paprika
- 1 tbsp garlic powder
- 1 ½ tbsp flour
- 2 cups chicken stock
- 1 cup crushed or diced tomatoes
- ½ of a bag of Casa Bonita Smoky Chipotle Cantina Style Tortillas Chips
- 1 avocado, sliced
- Cilantro, finely chopped
- Green onion, finely chopped
- 4 eggs, fried to any style you like
Instrucions:
1. Make a crema by combining sour cream with Casa Bonita fire roasted jalapeño salsa. Set aside
2. Melt better in a large skillet over medium heat.
3. Add cumin, smoked paprika, oregano, garlic powder, and flour. Mix together until a roux is formed.
4. Hydrate the roux by slowly adding chicken stock, stirring as you go until a thick sauce is formed.
5. Add tomatoes and let simmer for 3-5 minutes. If the sauce gets too thick, reduce heat and add more stock.
6. Gently fold in tortilla chips.
Plate chips and top with crema, avocado, fried egg, cilantro, green onion, and eggs! Enjoy!
