Casa Bonita Foods is proud to introduce a new line of products within our already existing line of Salsas. These new Salsas are not the traditional type of Salsas. This time, we are specifically launching a couple of “Salsas con queso” or “Queso dips.”

Now, let us tell you a little bit more about the history of these popular products in North America.
The Salsas con Queso of our new line are inspired by the Queso dips, a favourite in Tex-Mex cuisine, which has a rich history rooted in the blending of Mexican and American food traditions. The word “queso” means “cheese” in Spanish, and in the context of Tex-Mex cuisine, it refers specifically to this warm, creamy, and often spicy cheese dip. This particular style of dip began to take shape in the early 20th century, particularly in Texas, where Mexican immigrants and Mexican Americans started to combine local American ingredients like processed cheese with traditional Mexican flavours. As a result of this fusion, people started using the “Quesos” to combine with different dishes or simply used them for snacks. These products have grown in popularity over the decades and have become a staple in all of North America, from Mexico all the way to Canada.
The concept of pairing cheese with chiles can be traced back to the introduction of dairy by Spanish settlers in the Americas. Texas was, at some point, part of Mexico; hence, the culinary roots of both countries are deeply connected in this area. These ingredients mingled with local flavours, and dishes like “chile con queso” began to emerge. By the early 1900s, recipes for chile con queso, a precursor to modern queso dip, started appearing in Texas cookbooks.
As mentioned above, Queso dip’s rise to widespread popularity occurred in the mid-20th century, coinciding with the advent of processed cheeses. These cheeses offered the perfect texture and consistency for a smooth, meltable dip.
Today, queso dip has become a beloved dish with countless variations. In our case, we have developed our line of Salsas con Queso following the traditional version that includes melted cheese and chiles, but with our twist, mixing white cheese with jalapeño and yellow cheese with chipotle.
