For the sauce:

Directions to cook the meat:

1 – Rub Al Pastor seasoning all over the pork tenderloin.

2 – Place foil (shiny side in) on the counter and line 5–6 pineapple slices in the center.

3 – Place the tenderloin on top.

4 – Add butter and more pineapple on top.

5 – Roast at 400°F until internal temp reaches 145°F.

6 – Let rest for 10 minutes before slicing.

Directions for the sauce:
1 – Heat salsa and stock over medium-high heat until simmering.

2- Whisk in cream and cook until slightly thickened.

3- Serve over sliced pork.
