Mexican-Inspired Tinga Roast Chicken for Dinner

Tinga Roast Chicken

Ingredients:

1 whole chicken (about 2 lbs), spatchcocked  

1 packet Casa Bonita Tinga Seasoning  

1 stick (½ cup) unsalted butter, room temperature

Zest from ½ lemon

Pinch of salt & pepper

2 cloves garlic, grated

2 potatoes, sliced

2 large carrots, sliced

Instructions:

1. Combine Casa Bonita Tinga Seasoning, butter, lemon zest, garlic, salt, and pepper to create a compound butter.

2. Carefully rub the butter under the chicken skin and all over the exterior.

3. Arrange potatoes and carrots on a sheet pan, place a rack on top, and position the chicken over the vegetables.

4. Roast at 400°F for approximately 1½ hours or until the chicken is fully cooked and the vegetables are tender.

5. Serve with herbed crema, salsa verde, Casa Bonita Fire Roasted Salsa, or chimichurri.
