We continue collaborating with different cuisine enthusiasts and chefs, and now it’s time for recipes with our friend Kyle Crawford @homechefkyle. The first collaboration of this series of recipes using Casa Bonita Foods and Tajin is a delicious and quick recipe for preparing tuna tostadas.
We are excited that our friend will show you a simple and easy way to make tostadas at home using Casa Bonita Tortillas in this recipe.
Ingredients:
- ½ of a red onion, thinly sliced
- 1 tbsp salt
- 1 tbsp sugar
- 1 ½ cup hot water
- 1 ½ cup vinegar
- ½ cup mayo
- ¼ cup Tajin fruity chamoy chili sauce
- 6-8 ounces of yellowfin tuna
- ¼ cup black sesame seeds
- 4 Casa Bonita yellow corn tortillas
- 2 cups of vegetable oil
- 1 avocado, sliced
- 2 radishes, thinly sliced
- Cilantro
Method
Start by pickling some onions. Add red onions, sugar, salt, hot water and vinegar to a jar. Cover and set aside. These take about 30 minutes. After that leave them in the fridge for up to 2 weeks.
Combine mayo and Tajin fruity chamoy chili sauce to make an aioli.
Coat tuna in black sesame seeds and season lightly with salt.
Heat a small pan over medium high heat with a little bit of oil. Lay tuna into the pan and cook on each side for 1-2 minutes or until the exterior is seared. Remove from pan, slice, and set aside
In a separate small pan, heat 2 cups of vegetable oil over medium-high heat.
Test to see if the oil is hot enough by dipping the corner of the tortilla in, if it bubbles, it’s ready to go. Fry the tortillas for 1 minute per side. Remove from the oil and set on a paper towel to dry.
Build your Tostada by stacking avocado, tuna, aioli, radishes, pickled onion and cilantro on top of the fried tortilla.
