Are you looking for some ideas on how to incorporate Casa Bonita Salsas into different dishes? We recently started a collaboration series with our friend Lisa Dickie from Dickie’s Cooking School to come up with some fun recipes!
These recipes are a series of different “ways you didn’t know you could use Casa Bonita Salsas.”
The first stop is a traditional Spanish recipe with a Mexican twist incorporating our Fire Roasted Chipotle Salsa.
Let’s start with what you need:
Tools:
+ Large pot
+ Large pan
+ Cutting board
+ Drying rack
+ Sharp knife
+ Vegetable peeler
+ Paper towel
+ Tongs/Spider
Next, let’s talk about the essentials (aka the ingredients).
Ingredients:
2 pounds of Russet potatoes peeled and cut into 1” cubes
1 teaspoon of cumin seeds
1 teaspoon of paprika
1⁄2 teaspoon of salt
1 teaspoon of baking soda
2 bay leaves
2 cups of sunflower/vegetable/canola oil
For the Bravas Sauce:
1⁄2-1 cup of Casa Bonita Fire Roasted Chipotle Salsa
1 good dash of Tajin Mild Hot Sauce
1⁄4 – 1⁄2 cup of mayonnaise
1 teaspoon of paprika
Optional: chopped parsley/cilantro to garnish.
Now, Let’s learn how to prepare it! Follow these directions:
Step 1: Place the potatoes into a large pot and cover with at least 4 inches of water. Add cumin seeds, bay leaves, baking soda salt and paprika. Set the heat to high.
Step 2: Simmer the potatoes for at least 10 minutes – you should be able to easily pierce with a paring knife.
Step 3: Strain the potatoes and allow to cool and dry completely on a drying rack. If you don’t have a drying rack place them on a tea towel over a baking sheet. They should be completely dry before you fry them.
Step 4: While the potatoes are drying, making your Bravas sauce. Combine salsa, Tajin Mild Hot Sauce and
paprika. Mix in 1⁄4 cup of mayo. Taste. Add more mayo/salsa to your tastes.
Step 5: In a large skillet, heat 2 cups of oil until it shimmers (if you have a thermometer, you want it to be 340 degrees. Gently add in the potatoes and cook until golden brown.
Remove from heat and blot with a paper towel.
Step 6: Place potatoes in a bowl and drizzle with your roasted salsa Bravas sauce. Top with cilantro/parsley and serve.
