Ingredients
2–3 tbsp oil
1 onion, chopped
½ packet Casa Bonita Taco Seasoning
1–2 bell peppers, chopped
1 can mixed beans / black beans / white Romano beans (do not drain)
2–4 cups vegetable stock
Salt & pepper to taste
Toppings (don’t skip!)
Casa Bonita Yellow Cheese & Chipotle Queso
Avocado
Jalapeño
Cilantro
Purple Onion
Directions
- Sauté onion in oil for a few minutes until soft.
- Add Casa Bonita Taco Seasoning and cook another minute to bloom the spices.
- Add bell peppers and stir until warmed through.
- Add the entire can of beans (liquid included) and simmer for 10 minutes.
- Thin with vegetable stock to your desired consistency.
- Finish with queso, avocado, cilantro, purple onion & jalapeño.
