Are you ready for the Holidays? If you are running out of time and looking for ideas for recipes to surprise your guests during Christmas and the holidays, look no further. One of our most active collaborators this year helped us with some fantastic and easy-to-make recipes to prepare you for this season.
Thanks to our friend, the chef Kyle Crawford @homechefkle, we have an option for a quick snack with Queso Salsa and Chips, a delicious cranberry salsa to make things more interesting, a main dish made with tostadas and duck that you don’t want to miss, and a unique take on an apple pie dessert! There are lots of options for you to choose from.
Without further ado, let’s jump on the ingredients and instructions for these holiday recipes!
Christmas Queso Party Dip
Ingredients:
- 1 jar of Casa Bonita White Queso
- 1 small red bell pepper, diced
- 1 jalapeno, diced
- 1 small tomato, diced
- 1-2 green onions, sliced
- 1 bag of Casa Bonita Tajin Cantina Style Tortilla Chips
Intructions
Simply spoon Casa Bonita White Queso into a bowl and top with diced and sliced veggies. This dish is designed to include tasty red and green veggies for a festive vibe, but feel free to top with any veggies or proteins you like.
Serve with Casa Bonita Tajin Cantina Style Tortilla chips at your next holiday themed party!
Christmas Cranberry Salsa with Chips
Ingredients:
- 1 cup of fresh cranberries
- ½ of a red onion, rough chopped
- ½ of a small jalapeno, rough chopped
- ½ cup fresh cilantro, rough chopped
- 1 tsp salt
- 1 tbsp Tajin classic
- ¼ cup sugar
- Juice from 1 lime
- 1 ½ cup of cream cheese, softened
- 1 bag of Casa Bonita Chipotle Cantina Style Tortilla Chips
Instructions:
Combine cranberries, onion, jalapeno, cilantro, salt, tajin, sugar, and lime juice in a blender or food processor.
Blitz until salsa is as smooth or chunky as you like. Add small amounts of water if needed to get the blender moving.
Deposit in a jar and leave in the fridge for 12-24 hours before serving.
Serve on top of a bed of cream cheese alongside Casa Bonita Chipotle Cantina Style Tortilla Chips at your next holiday themed party!
Holiday Inspired Duck Tostadas
Ingredients:
- 2 cups of fresh cranberries, halved
- ¼ cup of sugar
- ½ cup of water
- 1 cup of red wine
- 1 tsp Mexican oregano
- 1 duck breast
- Salt
- Thyme
- 2 cloves of garlic
- 4 Casa Bonita Blue Corn Tortillas
- Leaf lettuce
- Red onion, thinly sliced
- Cilantro
Instructions:
Start by making the red wine cranberry reduction.
Add cranberries to a small saucepan over medium heat along with sugar and water.
Let cranberries stew for 2-4 minutes or until bright pink in colour.
Add red wine and Mexican oregano and let reduce for 4-5 minutes or until cranberries are jammy. If liquid cooks off too quickly, add more water as needed.
Remove from the heat and let cool completely in the fridge.
While the cranberries cool, sear your duck breast.
Start by scoring the fat then lay skin side down into a cold pan. Turn the pan on medium heat and leave the duck breast in disturbed for 5-6 minutes or until fat has rendered and skin is crispy, and golden brown.
Flip and let cook for 2-3 minutes.
Remove the duck breast from the pan, leaving the rendered duck fat behind. Deposit into the oven at 400F along with thyme, garlic, and a light sprinkle of salt.
Let roast in the oven for 4-5 minutes or until your desired internal temperature is achieved. Remove from the oven, let rest, then slice as thinly as possible.
Prepare your tostadas by frying Casa Bonita tortillas in the rendered duck fat over medium-high heat for 1 minute a side or until crispy.
Stack lettuce, duck breast, red onions, cranberry sauce, and cilantro on the tortilla and enjoy!
Apple Pie Tacos
Ingredients:
Apple filling
- 3-4 apples, peeled and diced
- ½ cup of melted butter
- 1 tsp vanilla extract
- 1 cup of brown sugar
- 1 tbsp cinnamon
Oat Topping
- 1 cup of rolled oats
- 1 tsp cinnamon
- 1 tsp nutmeg
- 1 tsp salt
- ¼ cup sliced almonds
- ½ cup brown sugar
Assembly
- Chopped Pecans
- 4 Casa Bonita White Corn Tortillas
- Oil for frying
- 1 cup white sugar
- ¼ cup cinnamon
- Vanilla Ice Cream
Instructions:
Preheat your oven to 400F.
Toss diced apples in melted butter, vanilla, brown sugar, and cinnamon.
Mix all ingredients for the oat topping together in a bowl.
Add the apples to a skillet or baking dish.
Top apples with oat topping and chopped pecans.
Bake in the oven for 12-15 minutes or until the apples are soft.
While the apples are baking, mix together white sugar on a plate.
Heat oil in a small pan and fry Casa Bonita White Corn Tortillas for 1 minute per side or until golden.
Shake off excess oil, then toss in cinnamon sugar.
Top the tortillas with apple pie filling, then top with a scoop of vanilla ice cream. Enjoy!
